Spicy Steak Tacos September 23 2011

  • 1 Large Flank Steak (about 1.5#)
  • 1 T. Chili Powder
  • 1.5 tsp cumin
  • 1 tsp coriander
  • ¾ tsp salt
  • 4 garlic cloves minced
  • ½ cup of beer
  • 2 Jalapeños seeded and minced
  • ½ cup chopped tomatoes
  • 2 tsp brown sugar
  • 1 T lime juice
  • ½ cup of water
  • 12- 8 inch Tortillas 

Marinade steak in the beer, garlic and the four seasonings for up to 2 hours. Preheat grill to medium high heat. Grilled flank steak for 10 minutes (about 5 on each side) and then let rest for another 10. On skilled simmer the chopped tomatoes, brown sugar, water and lime juices until it is reduced by about ½ (about 6-8 minutes). Slice flank steak ¼ thick against the grain at an angle (ask your butcher for help if need be) and toss it in the skillet to finish off. Serve with the Tortillas and the appropriate toppings!
