Lobster BLT September 27 2011

Simmer a tablespoon of water while slowly adding the butter gradually using a whisk. Once the butter has been emulsified and you add a squeeze of the lemon, then poach the lobster in medium low heat for about 2 minutes per side. Fry the bacon on a skillet on the side. After the lobster is done, cut in 1 inch cubes then throw in the skillet with the bacon for a 1 minute to build texture and extra flavor. Keep the butter/poaching liquid simmering. Put in tomato which has been chopped coarse and the garlic. Simmer for 5 mintues. Pull the tomato chunks out. Layer the bread with 2 lettuce leaves, the lobster, tomato chunks, and bacon. Feel free to add a touch of mayo and enjoy with some crispy fries!
