Roasted Leg of Lamb September 27 2011



Leg of Lamb
Olive Oil
½ cup Chopped Garlic
Salt (sea or kosher)
Cracked Black Pepper
4 Fresh Rosemary Sprigs or 1 tsp dried
1 Cup of Red Wine (optional) 

Place your Leg of Lamb in a roasting pan. Pour Wine over the Leg, let set for 10 minutes. Rub the Leg of Lamb with Olive Oil and Chopped Garlic.  Sprinkle with Salt, Cracked Black Pepper and add the Rosemary.  Preheat your oven at 375 degrees.  Put uncovered Leg of Lamb in the oven and bake for 30 minutes.  Baste the Leg with the liquid in the pan, cover with foil and turn the heat down to 325 degrees. Use the following cook time instructions based on the weight of your Leg of Lamb (first half hour is included in the times below).  Bring the internal temp to 145 degrees for medium, and let set for 15 minutes to finish off before carving.
