Pancetta, Spinach and Feta Stuffed Chicken Filets July 08 2012


 

6 oz smoked pancetta (sliced thin)
6 oz feta cheese                                                                                                                                                                            6 oz spinach
6 chicken breast filets
Buckeye Butcher Rub
Olive oil
1 cup Chicken Broth

Take the chicken filets and fold them over a 1/6th of the pancetta, spinach and feta. Use a small toothpick to hold them together. Season with the buckeye butcher rub and a touch of olive oil. Sear on top of the stove for 2-3 minutes a side. Use a 9x13 and after you put the stuffed chicken in, sprinkle olive oil and the seasonings listed. Bake, covered, for 20 minutes at 350 with a cup of chicken broth. Can also be grilled!
