Pasta with Sun-Dried Tomato Pesto and Feta Cheese September 21 2012

1# of Pasta (Linguine, Spaghetti and Cappellini are my favorite with this sauce)

¾ cup oil-packed sun-dried tomato halves, drained

¼ cup loosely packed basil leaves

2 tbsp slivered almonds

2 tbsp fresh Parmesan or Locatelli Cheese

1 tbsp fresh minced garlic

¼ tsp of both salt and pepper

½ Cup of Feta Cheese (crumbled)

 

Cook pasta according to package directions. Drain and reserve 1 cup of the cooking liquid. While pasta cooks, place tomatoes and the next 6 ingredients (omitting the feta) in a food processor or mixer. Process until finely chopped. Combine tomato mixture and the reserved 1 cup cooking liquid, stirring with a whisk. Add to pasta;  toss well to coat. Sprinkle with feta. Have fun and enjoy!
